May be you have deleted (if so, it would be one of the most unkind actions that one can do to any other person ın this world) my question but I really wanted to have your recommendation on a good quality Chinese Restaurant which you should have visited recently in Istanbul as "Being an expert in Chinese kitchen from (fm ?- by the way there is no such abbreviation in English language) different parts of China".
If you do not know any, you might as well say "I do not know". But in that case, it would be misleading to present yourself an "expert in Chinese kitchen".
"Chinese Cuisine" (not kitchen:) has 8 different variations presenting more than 800 different kind of food which can be gathered from 24 totally different regions of China.
No one here in New York where the heart(s) of "Chinese cuisine(s)" are located, calls himself or herself "an expert on Chinese kitchen" as everyone knows that even in China one rarely knows what other people in other regions really eat what kind of food:
