Thanks for your review. I’m glad that you tried many difference Vietnamese restaurant as you seem very informed in the cuisine. My name is Tom and I'm the owner of restaurant. I was born and raised in South Vietnam. I have visited my country numerous time and tried many dishes in difference regions. The main three regions are North (Ha Noi), Middle (Hue), and South (Ho Chi Minh City aka Saigon). Each region has developed its own unique flavours so each Vietnamese Restaurant will have its own style depending on where chef comes from. Our restaurant has a southern style cooking where the flavour will tend to be sweet.
As for the dish that you ordered, the spring roll can be made two ways. The one we served is made with wheat spring roll paper for restaurant use. It can also be made with a white rice paper usually used for casual dining or feast.
The grill pork can be made using a few difference types of cuts as well. We use the pork butt which comes from the shoulder area because it boneless. This creates a better eating experience with the vermicelli. We also source it locally here on Vancouver Island. Another way to make grill pork is with pork chop and it’s usually serve with rice.
Vietnamese food made in Vietnam will be difference compare to Vietnamese food made in Canada. The animals are fed differently and the sauces will have different quality to them. We source what we can locally and we apply authentic Vietnamese marinate and cooking methods.
