‪The cooking classes with Chef David Tanis more than lived up to my expectations. First the setting- stunning, comforting, serene. The gardens, pool and buildings are beautiful and classic Sicilian. My accommodations were cozy and private with basic comforts ( a bathroom upgrade needs to be considered as well as better quality mattresses).

The itinerary for the week allowed for structured cooking classes combined with free time and excursions to interesting places. The small class size - in this case just eight of us - made for an intimate, hands-on experience. The evening aperitivo was the true highlight of the day when we could all gather to laugh, tell stories and ask questions.

The staff was outstanding in every way - and genuinely seemed to enjoy their jobs with passion and interest. Meeting Fabrizia was a highlight and puts the whole experience in the proper perspective.

The menus David prepared truly reflected the Sicilian way of cooking - slow, fresh, seasonal - with a respect for the generations of mothers and daughters, aunties and grandmothers who quietly went about their daily routines of cooking for family and friends.

I left with a true understanding of what garden-to-table cooking means and with better skills to recreate the menus as home.

I highly recommend this experience - it will change the way you cook!‬

‪I took the Olive Oil class in October/November 2018. I loved the class, It was a lot of fun. The people that work at the school were wonderful, very welcoming and professional. The area was beautiful. We had a few excursions that were very informative and fun. It was my birthday during that week and the staff went out of their way to find my favorite cookies! What a wonderful surprise. I loved the apartment that I stayed in, it was a 2 bedroom apartment that I shared with 2 other women. Luckily they were great roommates. The food we cooked was amazing, I never even knew you could make gnocchi with ricotta! I cannot recommend this school highly enough.‬

‪This experience was booked for us as part of our Sicilian experience. It may be rather far from any city but the trip out to the villa is worth the drive. This beautiful location in an old farmhouse is wonderfully typical of all we saw. The staff was very friendly, spoke good English and made our afternoon so delightful. Our husbands were involved in the cooking as were both wives- the kitchen staff was very efficient. We prepared panelle, ricotta ravioli, involtini and watermelon pudding! Lunch for 9 included us as guests as well as staff and a food critic! Excellent time. Did not realize lodging was available or we might have opted to stay there.‬

‪We arranged to do the half day cooking class with arrival the evening before the class starts. We were already very impressed when we arrived at Case Vecchie. It is located in between vineyards and complete nature. They have an amazing pool where we relaxed before the start of the class. The service from the booking of the class through arrival and the class itself to the departure was very welcoming and personal. We learned a lot about everything that grows in Sicily and can be used for cooking but also how to really do Sicilian food and the tips and tricks in general. We had a lot of fun and would always come back if we have the chance! ‬

‪I came up here to have a look to bring a group of tourists for next year. This is a truly amazing place to visit and experience, totally stands on its own, has its own sense of character and quite welcoming. The staff are welcoming and the experience is priceless.‬

‪It is not recommended. Outings don't eventuate. Rooms are sub standard: no en-suite and not secure. Wine is corked (and they don't understand corked wine), cooking bench caters for 3 people and as we were 11, you don't get a see-in, Fabrizia and Paola are not trained chefs so really floundering with cooking methods. Cost-a-lot and believe me, not worth it.‬

Dear Jenny, thank you for your feedback, we always seek to improve what we offer our guests. In terms of the accommodation, as you probably noticed, it is not a hotel but a family home; a simple cozy country home with beds made up with embroidered linen; and embroidered towels. The service is homey and it is clear from our website that it is not a 5-star hotel. The door of each bedroom can be locked with a key, however as the school and accommodation is on a family estate, it is very secure even if you decide not to lock your room.    Wine: we produce 3 million bottles every year, export in 65 foreign countries and have a 30-year history of awards. It is possible to get a corked bottle which may go unnoticed by a new worker and if we are made aware of this, we are more than happy to replace it.   Neither Paola nor I have ever claimed to be trained chefs; both our websites clearly state this. We are home cooks who have made the choice to investigate traditional Italian cuisine, culture and to share this. We understand that sometimes expectations are not met and we are sorry you had a bad experience.  All the best Fabrizia and Paola

‪Our group of about 50 enjoyed a half day at the cooking school. Our organizer requested the visit, and I didn't get the feeling that it was at all typical to have groups of that size, but they handled it well. The staff was very friendly and quickly served us drinks. We split in 2 small groups to alternate touring the gardens and attending a cooking demonstration. My only disappointment was that the class was not hands-on. There was one instructor (Mario), one student (staying for 2 weeks), and two volunteers from our group as helpers. This was followed by a lunch of the foods that we learned to prepare, although we did not receive recipes. It was impressive that they were able to seat 53 people on one long table setting. The food was very good. This is my second trip to Sicily, and I think that this was a wonderfully unique thing to do that complements the typical tourist experiences in Sicily. For those who are thinking of visiting during hot weather, please note that they are in the process of installing a swimming pool. I'm not sure of its estimated completion time.‬

‪We recently spent 5 days at the cooking school and could not have enjoyed ourselves more. It far exceeded all of our expectations. We cooked with Fabrizia and Mario and produced some really wonderful meals. They are both very "hands on" instructors who are equally comfortable teaching by demonstration and/or by doing. We enjoyed harvesting some of our ingredients from the garden and visiting a local sheep farm to watch ricotta cheese being made.
We were joined at meals by two interns and enjoyed good conversation and the opportunity to sample many of the well known Tasca wines. We also enjoyed a tour of the winery.
The cooking school and the winery are set in a beautiful part of the Sicilian countryside and it was wonderful to be able to experience it in afternoon walks.
All in all the school experience was the high point of our 3 week
Sicilian trip.‬

‪my wife and I spent 2 wonderful days at the cooking school with Fabrizia, her assistant Mario and the rest of the staff. Our time included a fascinating visit to a sheep farm to watch the making of fresh ricotta and the best winery tour I had ever been on. We then had a lovely tasting of some of the best Tasca wines and a wonderful lunch at the winery. That afternoon we helped prepare a dinner of typical Sicilian dishes. We spent a lot of time sitting around the large table adjacent to the kitchen at mealtimes engaged in conversation about food, wine and the world around us.
If you love food, wine and great conversation this is a must activity when you visit Sicily.‬

‪Towards the end of our week-long Sicilian culinary tour, we spent our final three nights at Casa Vecchie, run by Anna's daughter Fabrizia and a handful of international interns...where traditions of a culinary icon continue. Throughout our stay, we feasted on fine Sicilian cooking; even learning to prepare a few dishes under Fabrizia's mentorship. I would say that we were fortunate were were chauffeured to the Casa -- otherwise, I would surely have failed to find the place on my own in the hills of Vallelunga. The hostess was warm and engaging as was her staff. Away from the kitchen, I enjoyed the walks through the countryside and in the vineyards. I enjoyed our comfortable accommodations; especially the complementary wifi. On technical merit, Casa Vecchie is a huge winner. Aesthetically, this was the perfect place to end our tour as it nicely out the "wax seal" (so to speak) to our magical week. Strongly recommended. Looking forward to our return visit.‬
